Biography

Sophie Schneblin is a graduate student in Food Science at the University of Minnesota–Twin Cities in the Grain Biopolymer Research Laboratory under the supervision of Dr. George Annor. She earned her B.S. Summe Cum Laude in Food Science from the University of Minnesota in 2025.

Her research focuses on developing a method to remove color pigmentation from Alfalfa without degrading its attractive qualities such as protein and fiber.

In addition to her research, Sophie has experience in food product development and applied food science through industry internships in research and development. She is particularly interested in the intersection of cereal chemistry, ingredient functionality, and sustainable food systems.

Outside of the lab, Sophie enjoys baking, cooking, traveling, and spending time outdoors.
