Dr. Chen is a Professor and General Mills Chair in Genomics for Healthful Foods in the Department of Food Science and Nutrition at the University of Minnesota. Her research aims to understand the molecular and cellular mechanism of the development of nutrition-related chronic diseases - obesity and diabetes. Dr. Chen received her Ph.D. in Nutrition from the University of Georgia in 1998. Following her Ph.D. study, she undertook postdoctoral research in the field of adipocyte biology, obesity, and type 2 diabetes in the Diabetes Branch at National Institutes of Health in Bethesda, Maryland. She started her faculty career in 2005. She has been a review panel member of NIH and Italian Ministry of Health grants. She serves as an academic editor for multiple journals including PLOS ONE, Adipocyte, and Journal of Nutritional Disorders & Therapy.
