The Department of Food Science and Nutrition at the University of Minnesota is currently seeking an:
Assistant Professor in
Food Resource Utilization and Sustainability

In continuation of the FScN Strategic Hiring Plan, we are now in search of candidates for our next open faculty position in Food Resource Utilization and Sustainability. This position will be a nine-month, tenure-track appointment involving research and teaching that supports the mission of the Department of Food Science and Nutrition. The appointee is expected to develop a strong extramurally funded research program focusing on the exploration of ways that novel or underutilized crops and byproducts can be used as sources of food ingredients or directly used in the formulation of novel foods that are sustainable, healthy, and appealing. This position is integral to enabling the regeneration of Minnesota's natural resources and accelerating Minnesota's transition to a competitive bioeconomy.

Research will be centered on food resource utilization and upcycling of byproducts that involves aspects of processing, microbiology, and chemistry, with an additional focus on the development of sustainable added value technologies. We are specifically interested in expertise in fermentation as a platform for agricultural and food byproduct utilization, sustainable bioprocessing and agrofood conversions, ideally in combination with data-based approaches towards sustainability. Research should emphasize crops and natural resources that are of significant potential interest to the Minnesota bioeconomy and that align with the wider efforts in this area at the University of Minnesota and its programmatic partners such as AURI (Agricultural Utilization Research Institute) and ReFED (Reduce Food Waste, Food Recycling and Recovery). The position will bridge various disciplines and centers, with research, teaching and outreach taking place in the department as well as in other facilities and centers at the University of Minnesota campuses.
