Biography

Dr. Samira Feyzi is a postdoctoral associate researcher in the Department of Food Science and Nutrition and Plant Protein Innovation Center at University of Minnesota. Samira has her bachelor and master’s degrees in Food Science and Technology and completed her Ph.D. in Food Science and Technology- Food Chemistry at the Ferdowsi University of Mashhad, Iran. Samira did part of her Ph.D. research at University of Naples Federico II (Italy). Her research focus on Food Chemistry in particular Food Proteins and Flavor Compounds. Protein extraction, characterization, and modification using novel process, including cold atmospheric plasma and enzymatic approaches, elucidation of the effects of protein sources, scale-up process, breeding lines, and modification methods on structural, functional, nutritional, and flavor properties of plant proteins, along with interactions of various animal and plant proteins with flavor compounds, flavor release, and perception are part of her research. Samira is also the reviewer of several international journals in Food Chemistry and an IFT member.
