Prince is a PhD Student in Food Science with a minor in Data Science working on improving the commercial viability of Intermediate Wheatgrass (IWG), the first perennial grain to be commercialized for food use, through the development of value-added ingredients and new products. As part of his PhD, Prince has also worked on quantifying FODMAPs in different wheat varieties grown in Minnesota and exploring the use of fermentation to reduce the FODMAP levels in these wheat varieties. Prince is a proud recipient of the University of Minnesota CFANS Diversity Scholars Graduate Student Fellowship Award, 2019-2020. Prince was also involved in the 2020 Ocean Spray Cranberries, Inc. Student Product Development Competition, where his team won the 3rd place award. In addition, Prince has been the recipient of The American Oil Chemists Society (AOCS) Industrial Oil Products (IOP) Division Student Excellence Award - 2017, and the IFT Food Laws and Regulations Division Scholarship Award - 2016.
