Dr. Scott Crow

Bachelor of Science in Exercise Science at Creighton University

I was born and raised in Racine, Wisconsin. Growing up, I was highly involved in musical theatre, choir, and band as well alongside coursework. In 2018, I graduated from Creighton University with a Bachelor of Science in Exercise Science and Pre-health professionals. After graduating from Creighton, I became an American college of sports medicine licensed certified personal trainer (CPT) and worked for a year at a private personal training studio working with older adults. I created and executed personal training programs for adults based on a functional fitness model.

In 2019, I decided to go back to school to become a registered dietitian and complete my Masters in Nutrition at the University of Minnesota. I completed my dietetic classes within the first year and a half and then started my graduate coursework. My graduate research is focused in the area of eating disorders under my advisor, Dr. Scott Crow. My research looks at the perceptions of patients and providers in eating disorders on the inclusion of exercise and exercise related nutrition in eating disorder treatment.

From fall 2019 until the summer of 2021, I started volunteering with the University of Minnesota sports nutrition department and worked alongside the Sports Dietitians to assist in providing nutrition to many different athletes along with providing cooking classes and demonstratios to athletes, creating nutritional educational content.

In 2020, I was a part of SNAC student organizaiton and was able to use motivational interviewing skills to provide nutrition guidance to students at the University of Minnesota.

In 2020, I worked as a dietary aide at Abbott Northwestern Hospital delivering tube feeds, taking orders, and working with many different types of medical diets.

In July 2021, I started working for the Emily Program as a dietetic technician. In my role, I worked directly with the registered dietitans and clients in order to provide food for each client. I also provided therapeutic meals to clients utilizing motivational interviewin skills.

My next step and career goals include graduating in May 2022 and then completing a dietetic internship in order to sit for the RD credentials exam. My goal is to become a registered dietitian with hopes to work in the field of eating disorders as this is an area of passion for me.
