Research focus: My research focuses on foods and digestive health. I have examined how different whole foods can alleviate the symptoms of digestive issues like constipation, diarrhea and irritable bowel syndrome.
How did you become interested in nutrition?
As a life-long food, lover, nutrition seemed like a perfect fit and through the coursework at the U I also found that counseling and working one-on-one with people was a passion of mine as well.
Why did you choose the University of Minnesota?
I specifically chose the U to pursue my degree because of the challenging, yet rewarding experience I had a the U when I obtained my B.S. in Biochemistry.
How does your research tie in to the research being done in your adviser's lab?
Our lab does a lot of research on fiber and its impact on health including satiety, gut health and health markers like stool frequency and consistency.
I plan to graduate this spring and begin The Emily Program Internship in August to become a registered dietitian.
