Throughout the month of March, we will be highlighting alumni of our DPD program as part of National Nutrition Month®.
This week we feature alumna Ashley Oswald, who graduated from the program in 2011.
Where are you currently working, and what do you do in that position?
I work for myself at Ashley Oswald Nutrition LLC as a digestive health specialist, helping people get rid of symptoms such as gas, bloating, diarrhea, and constipation using food modification, professional quality supplements, lifestyle adjustments, and sometimes functional lab work.
Why did you choose to study Nutrition at the University of Minnesota?
I chose the University of Minnesota because of it being in the heart of Minneapolis. I grew up in a small town, and was excited to move somewhere much larger with more opportunity.
What was your favorite class while you were a student?
Medical Nutrition Therapy
What is something you wish you would have known during your time as a student?
I wish I had known about how important networking and experience is, equally as important as grades from my experience. I recommend students find some sort of job or volunteer experience in the field, and something that they enjoy. My first job in nutrition was working in a hospital kitchen, and I honestly loved going to work. I learned things during that role that helped me greatly as an intern and as a dietitian.
What is your favorite healthy snack?
Guacamole with red pepper slices! Or hummus with cucumber slices and carrots. Or mixed nuts with dark chocolate pieces. Three way tie.
What is the funniest question that you’ve heard since becoming a RDN?
Well it’s not a question, but my grandpa once told me that he ate a whole bag of marshmallows, but that I shouldn’t worry because the package says “Fat Free” LOL
