Our lab group analyzes the the impact that dietary fibers have on the gut microbiome.
How did you become interested in food science?
I have been interested in food science my entire life.
Why did you choose the University of Minnesota?
I chose to come to the University of Minnesota as an undergraduate because I greatly enjoyed the atmosphere here, and decided to stay as a graduate student because I love working with Professor Slavin.
Upon graduation I'd like to continue to work in the food industry.
