Hydroxycinnamates such as ferulic acid, p-coumaric acid, sinapic acid, caffeic acid and their manifold derivatives such as chlorogenic acids were already a focus in 1998 when the first Ferulate conference was held in Norwich/UK. Hydroxycinnamates and related plant phenolics fulfill a broad range of physiological roles in the plant but they are also of huge interest as potential bioactive compounds in our diets, as factors influencing food processing, as flavor pre-cursors, as factors limiting forage digestibility and biofuel production etc.
Ferulate 08 aims to provide a 10-year update but also aims to broaden the focus on phenolic compounds that are related to hydroxycinnamates. In eight different sessions we will highlight:
- hydroxycinnamic acids
- hydroxycinnamaldehydes
- hydroxycinnamyl alcohols
- phenylacetic acids
- benzoic acids
- their linkages, derivatives, oligomers and polymers.
Our sessions are planned to give insights into the multifaceted roles of hydroxycinnamates and related plant phenolics in the following fields:
- general and analytical chemistry
- synthesis and role in plant structure
- human nutrition
- behavior of phenolic acids in food and non food-processing
- flavor development
- animal feed and biofuels
- enzymology
- general aspects
