Our research group works on physiological responses to dietary fiber, resistant starch, and other phytochemicals. We conduct human metabolic studies, in vitro studies, and studies with more subjective measures of health effects of food intake. A particular interest of our group is the gastrointestinal effects of food intake, including changes in microflora, short chain fatty acids, and other fecal measures.
