David Smith is Interim FScN Department Head
David Smith is the interim head of the Department of Food Science and Nutrition until a permanent head is identified.
Professor Smith has been a faculty member at the University of Minnesota for over 25 years. He began his career at Minnesota following completion of his Ph.D. in food science at the University of Wisconsin. He has held numerous leadership positions within the department and university including interim assistant department head, undergraduate program chair for food science, associate dean in the College of Human Ecology, and a member of the graduate school executive committee. He currently is the undergraduate program chair for nutrition, associate director of graduate studies for food science as well as oversees the department's teaching programs.
Dave's research has focused on dairy products, especially vitamin stability in fluid milk, ingredient functions in ice cream and use of dairy products as ingredients in formulated foods. He has published over 50 refereed papers and has overseen the graduate work of 24 M.S. students and seven Ph.D. students. He served three years as a director of the American Dairy Science Association as well as an officer for numerous state organizations. Currently, he is an editor of the International Dairy Journal. Dr. Smith is also a noteworthy teacher. He has taught courses in food chemistry, food processing, orientation to nutrition, food analysis, processing of dairy products, animal products for consumers, and evaluation of dairy products. He has been selected by the American Dairy Science Association to receive its Teaching Award for Dairy Manufacturing and the College of Agriculture's Teaching Award of Merit. Three times he was selected Coach of the Year at the Intercollegiate Dairy Product Evaluation Contest. He currently advises 130+ students in three different undergraduate programs.
Levine is First CFANS Dean
FScN professor and former head Allen S. Levine is the inaugural dean of the College of Food, Agricultural and Natural Resource Sciences. Levine will lead the college as it integrates and builds on the strengths of three previous university units: the College of Natural Resources; the College of Agricultural, Food and Environmental Sciences; and the Department of Food Science and Nutrition from the College of Human Ecology.
